Japanese Marinated C. Wirthy Salmon Fillets

Ingredients:

4 C. Wirthy salmon fillets thawed
1 leek (6 oz.) trimmed, cut in half lengthwise, rinsed, thinly sliced
1/2 cup julienne carrot (1 1/2x1/8-inch strips)

Marinade:
2 tablespoons low sodium soy sauce
1 tablespoon lemon juice
1 tablespoon packed brown sugar
1 clove garlic


Cooking Instructions:

Arrange salmon fillets in 8-inch square baking dish. Set aside.

In small mixing bowl, combine marinade ingredients. Stir to dissolve sugar. Pour mixture over fillets, turning fillets to coat. Cover with plastic wrap. Chill 1 hour.

Turn fillets. Sprinkle with leek and carrot. Re-cover with plastic wrap. Microwave at 70% (Medium-High) for 8 to 9 minutes, or until fish flakes easily with fork, rearranging pieces twice.

Serve with vegetables.
