Ingredients:

4 - C. Wirthy Blackened salmon fillets
1/4 head green cabbage, finely shredded
1 cup best-quality mayonnaise
1 tablespoon chipotle pepper puree
1 tablespoon fresh lime juice

1/4 cup finely chopped fresh cilantro
12 soft flour tortillas (taco size) or corn tortillas
Salsa
2 limes cut into wedges


Cooking Instructions:
  1. Preheat grill or grill pan over high heat.
  2. Brush grill with oil. Grill salmon on each side for 3 to 4 minutes or until desired doneness.  Let cool slightly.
  3. Combine the mayonnaise, chipotle and lime juice in a small bowl and season with salt.
  4. Flake the salmon with a fork   Heat the tortillas on the grill or grill pan for 30 seconds on each side.
  5. Top each tortilla with 1 tablespoon of the chipotle sauce, flaked salmon, cabbage and cilantro and salsa if desired. 
  6. Serve with lime wedges.
