Tangy Asian Citrus C. Wirthy Salmon

Ingredients:

4 C. Wirthy salmon fillets

1/2 cup soy sauce
2 tbsp balsamic vinegar
2 whole lemons
2 tbsp grated fresh garlic
2 tbsp fresh ginger

1 1/2 tbsp brown sugar
1/2 tbsp ground black pepper
4 salmon fillets
4 slices of unsweetened pineapple


Cooking Instructions:

Preheat the oven to 375º.

In a saucepan, combine the soy sauce, balsamic vinegar, the juice from the two whole lemons, garlic, ginger and brown sugar.

Cook at a low heat for 5 minutes, making sure the sugar has combined well with all the ingredients.

Place the salmon fillets in an oven-safe dish and soak both sides with the sauce. Sprinkle the black pepper on top of the fillets.

Bake for 15-20 minutes until fish flakes with a fork making sure you baste the fillets with the sauce at least once.


Serving Suggestions:

Place the fillets on plates and drizzle with the remaining sauce using the pineapple as a sweet garnish.
