Following removal from the ponds, C. Wirthy
salmon is processed and packaged within minutes. Within
the plant, freshness and quality are preserved through temperature
control, a highly clean environment and a swift filleting
and packaging process.
Skin and bones are removed during this
process and each fillet is individually vacuum packed then
quick frozen.
 This
method of processing ensures a high quality a product that
when defrosted is comparable to fresh salmon but far more
convenient.
